Widely used in Mediterranean cuisine, thyme can be used in many of the same type dishes as rosemary. Like rosemary, however, it can easily overpower flavors so use it sparingly. Try thyme in sauteed mushrooms, soups, stews and when seasoning wild fowl or game meats. When using dry in a recipe to replace fresh, use 1/3rd of the amount called for in the recipe.
