A lovely and delicate herb, tarragon provides a hint of sweetness blended with an anise undertone. Very popular in French cuisine, you will find these called for in egg dishes, vegetables, butter sauces and fish/seafood recipes. Add this towards the end of cooking, however, as lengthy exposure to heat can cause its delicate scent to fade.
