Turkish oregano is usually crushed to both separate the leaves from the woody stem but also to bring out its most prominent flavors and oils. This is most commonly found in Italian tomato-based sauces and sprinkled on pizzas but is also excellent paired with lemon, garlic and olive oil for marinating meats and in salad dressings.
