The thin outside lemon layer of a lemon contains all of the beautiful lemon oil and citrus flavor. It is bright in flavor with a touch of sweetness. Lemon peel actually includes a bit of the white part just below the skin so you also get a little of the bitterness of that section of the peel. It can be used in its dry form or rehydrated (3 parts water to 1-part peel for 5 minutes). Lemon peel is frequently used in baked goods with citrus flavors and some dry rubs. It is also great mixed with other herbs and spices on vegetables.
