Minced garlic is an easy-to-use substitute for fresh garlic when you don’t have it. Rehydrate it at a 4 to 1 ration (water to garlic) for about 5 minutes before adding it to recipes. Dehydrated garlic can give you the bright garlic flavor without any overpowering undertones you get with fresh. It is best to rehydrate before adding to tomato sauces as the acid in these can hinder the full development of its flavor.
